Preheat oven to 400°F (200°C). Roll out puff pastry and cut into rectangles. Bake until golden and puffed up.
In a saucepan, heat the heavy cream until simmering. Remove from heat and add the Godiva mint chocolate, stirring until smooth.
Once the pastry has cooled, slice each piece horizontally. Fill with the mint chocolate mixture.
Garnish with fresh mint leaves.
