01 | Choose the Menu

Start with the occasion and guest count.  Select one main dish, a meat-free option, two or three sides, and a dessert.  Choose a few dishes that can be prepared ahead.

02 | Estimate Quantities

Decide whether guests are having a full meal or grazing.  Use Chef Nico’s Buffet Calculator to help calculate estimated quantities.  Make allowances for second helpings and the length of the event.

03 | Gather Supplies

Match each dish to a platter, bowl or chafing dish.  Count plates, utensils, napkins, glasses, serving tools, labels, and the equipment needed to keep food at safe temperatures.

04 | Set the Table

Place plates first and arrange dishes in serving order.  Put utensils at the end and drinks on a separate table.  Leave room for guests to move and refill smaller plates as needed.
